| Like many top French chefs, Philippe Brillant started cooking as a child under the watchful eyes of his mother and grandmother. At the age of 15 years old he spent a remarkable summer season under a famous Master Chef who recommended him to the 3* star Michelin Restaurant Lasserre in Paris where he trained as a chef.
From the Restaurant Lasserre, Philippe went on to work at the Rothschild famous 5* Hotel Du Mont d'Arbois in Mégève and in Paris under the legendary Parisian chef Joel Robuchon. He continued to develop his skills at establishments around the world, including the Michelin Star Chewton Glen in the New Forest. | |  |
Philippe was appointed as Executive Chef to the Saudi Royal Family serving HRH Prince Khalid Abdullah, the well known racehorse owner. Philippe personally catered for him and his guests worldwide.

Philippe has gone on to open a series of businesses including:-
- The French Hamper Company.
- Maison Brillant, A high quality French artisan bakery production which supplied breads and patisserie products to Heston Blumenthal at the Fat Duck, Riverside Brasserie, The Hindhead in Bray, Anthony Worral Thompson and many more.
- Boulangerie / Patisserie at Harvey Nichols in London selling bread, patisseries etc.
- Le Parisien Restaurant.
